The Copeland Collins
At Copeland we like to put our on twist on what would usually be a traditional cocktail. A Tom Collins is popular amongst the Copeland Team, but when made with Copeland Rhuberry Gin, it became a popular amongst the entire community. The sweet yet crisp taste of the rhubarb compliments the zing of the lemon juice.
35ml Rhuberry Copland Gin
Juice of half a lemon
70ml Soda Water
2 Teaspoons of sugar
To garnish: a large lemon wheel & a fresh blackberry
Add freshly squeezed lemon juice, sugar and Gin to a highball glass and stir.
Add plenty of cubed ice and stir again.
Top with soda water and stir for a final time.
garnish with a lemon wedge and blackberry then serve.
